How a cream separator works

Whole milk is fed into a spinning bowl containing a stack of closely-spaced discs. Centrifugal force throws the heavier skim to the outside while the lighter cream is driven to the centre, and the two exit through separate outlets. By adjusting the machine you can change the volume and density of the cream you draw off. Warm milk (around 35 °C) separates best.
